Chicken with Red Wine & Grapes

INGREDIENTS:
4 x 150g Skinless Chicken Breast Fillets
1 red onioin, sliced
2 tbsp red pesto
300ml red wine
300ml water
125g seedless red grapes, halved
salt and black pepper
basil leaves, to garnish
METHOD:
Heat 2 tbsp of oil in a large frying pan, add the chicken breasts and cook over a medium heat for 5 min, turning frequently until browned. Remove from the pan and drain on kitchen paper.
Heat the remaining oil in the pan, add the sliced onion and pesto and cook, stirring constantly for 3 min until onion is softened, but not browned.
Add wine, water and grapes to the pan, bring to boil. Return the chicken breasts to the pan and season with salt and pepper to taste. Reduce the heat and simmer for 15 min, or until the chicken is cooked through.
Garnished with basil leaves and serve with mashed potatoes and/or greens.
